Legend of the Ebelskiver
Where did the Ebelskiver (or Aebleskiver as some spell it) come from? We know that it is a Danish pancake, and Ebelskiver means “apple slices” in danish. The Ebelskiver has been around for centuries, and legend has it that the Ebelskiver was invented in the Viking era.
Legend has it that in Viking Days, the Viking warriors after being in a big battle returned to their ship badly beaten and hungry. Their weapons were broken and shields badly damaged. The hungry Viking Warriors mixed up some flour and milk, and with nothing else to cook with they used their dented and battered shields as frying pans. Hence, the results were the “bumpy” round pancakes known today as Ebelskivers.
Today’s Ebelskiver Pancome in both cast iron and aluminum styles that are pre-seasoned for non-stick cooking. We have come a long way since Viking Days but still enjoy the wonderful taste of these little spherical pancakes, Ebelskivers.
