Favorite Ebelskiver Recipe

Making the best Ebelskivers in your new Ebelskiver Pan includes needing a good recipe or two to try.   This one is our family favorite:

Danish Aebleskiver

Sift together in a large mixing bowl 2 cups all purpose flour, 1/2 teaspoon salt and 1 1/2 teaspoon of baking powder.  Seperate 3 eggs and place the yolks in a separate large mixing bowl, add in 2 cups of buttermilk, and 1 teaspoon of vanilla extract. .  Stir the dry ingredients into the liquid mixture.  In another mixing bowl beat the egg whites until stiff, then fold egg whites into the batter with 3 tablespoons of melted butter. 

Heat approximately 1 tablespoon of oil in each slot of your new Ebelskiver Pan.  Spoon into the hot oil the batter until it reaches the top of the slot.  Fry dough, turning with a knitting needle as it turns brown until all sides of the Ebelskiver pancake is browned.  Roll the warm Ebelskiver in powder sugar and serve with fresh strawberry or raspberry jam.
